Back when I was in elementary school Wednesday was a day we looked forward to almost as much as Friday. On Wednesday our school got out early, and to make the day even better it was the day of our weekly bake sale. There was one item that was so popular that they almost always sold out of: Gold Bars. Unfortunately the schools in Albuquerque no longer hold bake sales but for those of you that have been searching (or those that would like to try them), here’s the recipe! This is one of my favorite treats to make. It’s actually very simple and there is no baking involved.
– 1 1/2 lb Peanut Butter (2 1/2 cups)
– 3/4 Cup Butter/ Margarine (1 stick)
– 3 Cups Crisp Rice Cereal
– 1 lb Powder Sugar (4 cups)
– 3-4 Cups Semi-Sweet Chocolate Chips
In a large bowl mix peanut butter and softened butter. Add powder sugar and crisp rice cereal (be careful not to over mix). Press the mix into a greased 9×13 pan or cookie sheet (for thicker bars use a smaller pan). Melt the chocolate chips in double boiler or microwave. (I microwave mine on medium stirring every 60 seconds.) Pour chocolate over mixture and place in fridge for about 20 mins. Once the chocolate no longer has a shiny glaze cut into pieces and return to fridge until chocolate has finished setting. Don’t wait to long to cut into pieces or the chocolate will be difficult to cut. Store Gold Bars in fridge until ready to eat.
